Robert Herder's famous touring knife, also known as the Mill Knife, is a must-have for any kitchen. The blade of this knife is made of high-quality carbon steel and is not stainless. Sharpened according to the traditional "Solinger Dünnschliff" method, the knife is so thin that it is extremely sharp. With a blade length of 5.5 cm and a handle made of red beech wood anchored with aluminium rivets, this knife is a true work of art.
This curved touring knife is ideally suited for peeling potatoes, cleaning mushrooms and other fine work in the kitchen. The hardness of the blade is 60 HRC, which means the knife retains long-lasting sharpness. However, the carbon steel requires special maintenance to prevent rusting.
To protect the knife and prevent accidents, we recommend not storing it loose in a drawer. Store the knife safely in a knife block, hang it on a magnetic strip, transport it in a knife folder or store it in a knife protector.
Like all other knives, dishwasher use is not recommended. We recommend simply rinsing this quality knife with lukewarm water and mild soapy water, and drying thoroughly. The dishwasher can expose the steel to temperature changes, acids and other corrosive substances, which can damage the blade when in contact with hard objects.
To preserve the knife's sharpness, we recommend using cutting boards made of wood, bamboo or plastic. Cutting boards made of glass, stone or metal can actually harm the knife, as they tend to be harder. It is also important not to let the knife come into contact with hard objects such as bowls, pans and serving dishes.
